ABOUT US

Hi there, and welcome to my blog CoCoSweet. My name is Kim, but most people call me Kimmy.  I am a very blessed Mum of four children and a gorgeous hubby. We are a little crazy at times, and you might find us singing at the top of our lungs while cooking dinner but that's what makes us, us! I am a graphic designer, food blogger, recipe creator, vegetarian and lover of all things beautiful. There is nothing more exciting than creating delicious vegetarian meals for my family and friends.

MY STORY?

 

I became a vegetarian two years ago and I am an "almost-vegan" except for my love of cheese and eggs (still working on that). After struggling for years with chronic anaemia, adrenal fatigue, low cortisol and a very low iron deficiency, I decided to change the way I ate and remove almost all animal products from my diet. It was the best decision I ever made, aside from the obvious (being truly grateful for no longer inflicting suffering onto animals) I needed to know where and what I was putting into my body so that I could work towards healing myself.

 

WHY I WANT TO SHARE MY BLOG WITH YOU?

 

My journey has been nothing short of fascinating and exhilarating, all at the same time. I started researching vegan and vegetarian nutrition and decided to do a course on it to fully understand what were the best foods to feed not only myself but my family too. I thought I enjoyed cooking and baking before I became a vegetarian, but I now I feel as though I am on all new food-high. Learning and researching all the fascinating uses for herbs, spices, root veggies, fruits, grains, nuts and seeds. It is such an exciting journey, that I want to share with others, who may have or still are, currently suffering from any of the symptoms I had.

Being a Mum is not only a full-time job all on its own but our time is shared among busy households, jobs, families and thinking of meals may be the last thing on our minds at the end of the day. This is why I wanted to create simple yet tasty recipes, weekly meal planning for the whole family, other little bonus ideas for packed lunches and snacks for the kiddies. All to help give you a resource to go to when you are in need of a quick meal for your family. My recipes are a mixture of vegetarian and vegan and I will guide you through them where I can, as to what you can add or remove for your preferred taste.

 

This is a wonderful journey to be on for me, and I will share my highs and lows with you as I go along. I feel much more energized since eating plant-based food, my skin became so much clearer and shinier, I feel stronger and the sense of guilt that came with eating meat has long gone. The slogan for my business is   Love made edible  and that's exactly what I am about - in a nutshell!
