Home made vs. bought cookies?

Its a very important question in our home because we are huge fans of four o'clock tea time. Call me old fashioned but tea time is a wonderful family tradition passed down and I want to keep it going for my children only with healthier treats.

This is a favourite chewy chocolate chip recipe that I make often at home and is part of our frozen cookie collection. It doesn't contain any of those nasty little ingredients that give us tummy aches or bloating. Try it our yourself and send me your feedback.

 

Vegan Chocolate chip cookies

 

1/2 cup coconut oil in its solid form

1 1/4 cups light brown sugar

2 teaspoons vanilla essence

1/4 cup coconut milk

1/4 cup unsweetened applesauce

2 1/4 cups stoneground flour

1 teaspoon baking powder

1/2 teaspoon himilayan salt

2 cups chocolate chips

 

Method

Preheat oven 180ËšC. In a large bowl whisk together the coconut oil, brown sugar and vanilla essence, continue beating until it is all well combined. Add the coconut milk and applesauce and whisk well.

 

In a separate bowl combine the flour, baking powder and salt. Add dry ingredients into the wet mixture and stir well until combined. The batter will be very thick. Fold in the 1 3/4 cups of the chocolate chips.

 

Scoop the batter onto a baking sheet then take the remainder of the chocolate chips and press them into the top of the cookies. Bake for 10 minutes until the edges are golden. Allow to cool slightly, then serve.
