Poffertjies (little fluffy clouds of Dutch deliciousness)

My visit to Amsterdam, Netherlands was incredible but not as exciting as the explosive deliciousness that happened in my mouth when I tried one of these. Naturally I had to hunt down how these were made and then make my own at home in South Africa. They were amazing and hence why I have to share them with you. They do, however, have to be served hot with melted butter, icing sugar and cinnamon sugar - anything less and it just wouldn't be the same.

This recipe takes a little time to prepare but it is worth the effort. Serve these little morsels hot and covered in icing sugar, melted butter and cinnamon sugar but I do warn you, you better make sure you are close by to eat some of them before the children devour them. Oh, and don't forget whipped cream...

250g all-purpose flour (I use Stone ground flour)

2 tablespoons sugar

350m milk (full cream preferably)

pinch of salt

1 sachet dry yeast (7 grams)

1 egg

For serving:

Butter

Icing sugar

Whipped cream

Cinnnamon

Method:

Heat the milk until its a little bit warmer than lukewarm. Remove it from the heat and mix in the sugar and yeast. Wait until the mixture becomes foamy or frothy, this should take about 5 - 10 minutes.

 

Combine the flour and salt in a bowl. Slowly add the yeast mixture and the egg and whisk until you have reached a smooth batter. Cover the bowl with a clean damp cloth and let it rest for about an hour or until the batter has doubled in size.

 

Pour the batter in a piping bag with out a nozzle. Heat your pan (if you have a Poffertjies pan then use that but if you do not, then you can use an ordinary pan) on a medium heat and brush with some butter. When the butter is hot, use your pipping bag to squeeze the batter into small balls in your pan, you will need to use your digression here as to how small or large you want them. Do a few test runs (especially if you are using a standard frying pan and not a Poffertjie pan). Keep in mind not to use too much batter at a time.

Flip the Poffertjies after about one minute or until they are golden brown. Serve hot with butter cubes, whipped cream and powdered/icing sugar and enjoy!
