Spinach noodles with roasted smoked paprika chickpeas & vegetarian sausages

If you are looking to replace wheat pasta then this is a tasty alternative. The spinach noodles are guilt free and healthy, mixed in with vegetarian sausages and crispy chickpeas. This colourful dish can be served in winter and summer, its that good!

Serves 6

 

1 or 2 packets spinach & cauliflower noodles (you can buy this ready-made from Woolworths)

300g vegetarian sausages

2 medium carrots - spiralized or grated

100g chickpeas (you can use tinned or fresh)

2 tablespoons smoked paprika

2 medium rosa tomatoes, finely chopped

1 clove garlic

2 tablespoon coconut oil

handful parsley

 

Method:

Preheat your oven to 180ËšC, place the chickpeas and the smoked paprika in an oven proof dish and combine. Roast in the oven for 15 minutes until the chickpeas are crispy. Then remove and allow to cool.

Using a medium sized saucepan, add one tablespoon of the coconut oil and add the sausages and cook until they are browned. Allow to cool and then slice the sausages. Remove them from the pan and add the second tablespoon of coconut oil and add the garlic and pan fry until they are browned, be careful not to burn them. Add the tomatoes and slowly cook those for a few minutes, but don't let them get too soft then add the sliced sausages.

 

In a large pot, bring some water to the boil and add the noodles and heat them through. Don't leave them for too long, once they are warmed remove them from the heat and drain.

 

In a serving dish place the noodles, carrots and sausage mixture and combine them. Then add the chickpeas and parsley, season to taste and serve!
